Exploring coffee is at the heart of what we do. Each month, we dive into the nuances of origin, variety, and process—whether by uncovering contrasts within a single region, or taking a deep dive into fermentation techniques.

With Siemasu Club, we invite you to slow down and engage with coffee on a deeper level. It’s about more than just taste, it’s about understanding, appreciating, and elevating every cup. By doing this we are expanding the understanding of what coffee is.

  • As we move into February, our focus turns to one of coffee’s most influential,  yet often underestimated, elements: variety. Beyond origin and processing, genetics shape how coffee grows, ripens, and ultimately expresses itself in the cup. This month explores how differences within Arabica influence structure, aromatics, sweetness, and texture.

    We’re featuring two washed coffees built on closely related but distinctly expressive varieties: Bourbon and Pink Bourbon. Bourbon, one of the earliest cultivated Arabica varieties, is known for its compact growth, high sugar content, and balanced cup profile. It typically delivers round sweetness, gentle acidity, and a cohesive, comforting structure.

    Pink Bourbon, once thought to be a simple colour mutation, is now recognised as a genetically distinct variety, likely influenced by Ethiopian landrace genetics. It tends to show higher aromatics, brighter acidity, and more layered fruit expression, often with floral or subtle herbal notes.

    From Central Huila, Colombia, El Triunfo by Miguel Bohórquez highlights Pink Bourbon’s expressive nature with notes of apricot, green apple, floral honey, and gentle herbality, carried by a bright, transparent structure. From Masaguara, Intibucá, Honduras, El Beneficio by Jose Yovany Rodriguez offers a classic Bourbon profile, combining cherry, doughnut-like sweetness, and dense blackcurrant lemonade in a rounded, balanced cup.

    Together, these coffees show how variety alone can shape flavour direction. Bourbon brings structure and harmony, while Pink Bourbon amplifies aromatics and complexity,  inviting you to taste February’s selection through a varietal lens, where genetics define expression as much as origin.

  • We recommend letting the coffees rest for at least two weeks from roast date.

    For brewing Pink Bourbon, aim for extractions around 2:45-3:00 min for more balanced cup, using water at 93°C. Keep the brew ratio around 1:17 and brew with 3 pulses for the most balanced and nuanced cup. And for Bourbon, aim for a bit more faster brew around 2:30 minutes using water at 92 °C. Keep the ratio around 1:15 and brew with 3 pulses.

  • The payment is handled via a monthly invoice sent by email. Which, you’ll receive at the beginning of each month, making membership management simple and hassle-free.

    Cancel your club membership- You can cancel your membership at any time by sending an email to hello@siemasu.coffee with the subject title 'Siemasu Club Cancellation' and your contact information in the message field. The cancellation must happen the before the end of the month so that we have time to cancel or pause your membership.
