PROCESSING
This coffee follows the traditional washed process used throughout Guatemala. Ripe cherries are depulped shortly after harvesting and fermented for approximately 12–24 hours, depending on the local climate. After fermentation, the coffee is washed clean and dried on patios or raised beds.
HISTORY
Huehuetenango is one of Guatemala's most distinctive coffee regions, located in the western part of the country near the Mexican border. Its combination of high elevations, diverse microclimates, water sources and traditional varieties creates coffees ranging from chocolate-driven profiles to vibrant, fruit-forward lots.
Joulu Siemasu is a Regional Select coffee, meaning it is built from coffees sourced from multiple smallholder producers within the region rather than from a single farm. This approach highlights the characteristic taste of place of Huehuetenango while offering a consistent and approachable expression of the region.
The cup itself reflects the character associated with the region: crisp fruit acidity alongside sweetness reminiscent of caramelized sugar, chocolate and nuts.
