Processing:
Farmers carefully handpick ripe cherries and deliver them to the washing station. Upon arrival, employees meticulously hand-sort the cherries, removing any under-ripe, over-ripe, or damaged ones. The selected cherries are then spread on raised drying beds. Each drying bed is labeled with a unique code to facilitate traceability and monitor the processing status.
To ensure uniform drying, employees regularly rake the cherries. The drying process typically takes around 16 to 21 days. Upon achieving uptimal moisture content the cherries are hulled, dry milled and packaged for shipment.

Located around 440 km outside the capital city Addis Ababa, Gera is a district in western Oromia close to the city of Jimma.
Gera district is a high-altitude location, with some spots well over 2000 meters above sea level. In addition, over half the land is old, untouched forest. The combination makes for a location that is well suited for coffee trees, and in fact, there are many that grow naturally here. The Gera coffee farm sits on 1000 hectares of this beautiful area with most of the land between 1780 to 2100 meters above sea level.
Gera coffee farm started in 2008 with only 100 hectares of coffee. Since 2019 they have expanded the operation to 500 hectares whilst the remaining 500 is yet to be farmed. They want to make sure to keep the local flora untouched and keep the microclimate intact to preserve the region. Besides planting more coffee trees, they have also started working with Jimma research center to plant varieties that are better suited for the soil and the area. Yellow Cherry is one of these varieties, which has been selected from local heirloom varieties.
