Ripe cherries are handpicked by smallholder farmers surrounding the Gihere washing station and carefully sorted before drying. Unlike Burundi’s more common washed style, this lot is processed as a natural coffee, meaning the cherries are dried whole with the fruit intact.
The coffee is slowly dried on raised African beds, allowing sugars and fruit compounds from the cherry to infuse into the seed. This process enhances sweetness and body while developing the coffee’s soft berry and cooked fruit character.
The result is a clean yet fruit-forward natural coffee that combines Burundi’s bright structure with a rounder, sweeter profile.
HISTORY
Gihere Central Washing Station was established in 1984 in Burundi’s Ngozi region and today works with more than 1,600 smallholder farmers. Most producers in the area cultivate extremely small plots, often with only around 250 coffee trees per family.
The station has played an important role in improving quality and infrastructure for local communities by providing access to processing equipment, education, and market opportunities. With over 200 drying tables and significant processing capacity, Gihere has become one of the region’s key quality-focused stations.
Ngozi’s high elevations, cool temperatures, and fertile soils create ideal conditions for Bourbon varieties to develop clarity, sweetness, and vibrant fruit character. While Burundi has traditionally been known for washed coffees, natural lots like this showcase a newer and more experimental side of the country’s coffee scene.
