PROCESSING
This lot is produced using Mio's advanced extended fermentation protocol. Approximately half of the harvested cherries are naturally overripe, having begun to dry while still on the tree, contributing additional sweetness and complexity. The cherries then undergo a carefully controlled 72-hour fermentation using Saccharomyces cerevisiae yeast, with glucose and fructose added to guide microbial activity and enhance flavour development.
Throughout fermentation, drying, and storage, every stage is closely monitored using Mio's traceability system. The result is a remarkably clean and expressive coffee with vibrant fruit character, silky body, and refined acidity.
