This smooth and balanced coffee comes from Finca Las Chicharras, located in the highlands of Chiapas, Mexico, near the Guatemalan border. Grown at elevations between 1,200 and 1,500 meters above sea level, the farm’s volcanic soils and humid microclimate foster slow cherry maturation, enhancing sweetness and flavor depth.This lot is fully washed, bringing clarity and brightness to the cup. After selective handpicking, cherries are depulped, fermented, and meticulously washed. The coffee is then dried under the sun on patios and raised beds to develop a clean, transparent profile.
The result is a silky and sweet cup, showcasing milk chocolate sweetness, citrus acidity, and a caramel finish—a soft, approachable expression of Chiapas terroir.
HISTORY:
Finca Las Chicharras is located in the La Concordia region of Chiapas and is part of the Café Sustentable project, which focuses on quality production and social responsibility. One key initiative is the Las Chicharras School Project, aimed at improving educational opportunities for children in the local coffee-growing community.
