PROCESSING
The ripe cherries are carefully sorted before being placed on raised drying beds. During drying, the cherries are continuously rotated to ensure even moisture removal and consistent fermentation. Depending on weather conditions, the natural process can take approximately 30–40 days.
Keeping the coffee inside the whole cherry throughout drying allows the fruit to influence the cup, developing the characteristic berry sweetness, wine-like acidity, and deeper fruit complexity found in this lot.
HISTORY
Brumas del Zurqui is a family-run micromill in Costa Rica's Central Valley, managed by fourth-generation producer Juan Ramón Alvarado Rodríguez and his family. The family began experimenting with new processing methods and expanding their infrastructure in 2003–2004, later adding their own cupping laboratory and roastery to maintain control over quality.
The micromill works with coffees from neighbouring farms and processes a wide range of varieties, including Caturra, Villa Sarchi, SL-28, Bourbon, Gesha, Typica, and Orange Bourbon. Juan's focus extends beyond coffee quality: he takes pride in creating employment and generating a positive social and economic impact within his community.
