PROCESSING
This lot combines anaerobic fermentation with natural processing. Freshly harvested coffee cherries are held in a sealed environment for fermentation before the natural drying stage. Anaerobic fermentation can intensify fruit character, acidity and body; in this coffee, the result is a vibrant profile of cherry, passion fruit and panela. The supplier does not specify the fermentation duration or drying time for this particular lot.
THE FARM & REGION
Finca Pampojilá was established in the 1850s by Manuel and Monica Diaz. After tropical storm Agatha damaged the farm in 2010, it changed ownership and entered a period of renewal, with new coffee varieties and infrastructure for innovative processing. The farm is part of Guatemala’s Association of Private Natural Reserves, with half of its land committed to remaining tropical forest. The volcanic slopes, rich soils and changing microclimates around Lake Atitlán make this a particularly interesting place to grow coffee.
