PROCESSING
This Ruiru 11 microlot is identified as anaerobic washed. Washed processing generally involves removing the fruit skin and pulp, fermenting the coffee, washing away remaining mucilage and drying the parchment. For this specific lot, the anaerobic designation indicates a low-oxygen fermentation stage, but the supplier does not give its exact timing or step-by-step protocol. In the cup, the combination is expressed through blackberry jam, currants and wine-like acidity.
THE FARM & REGION
Finca Pampojilá has been part of Guatemala’s coffee story since the 1850s. Following damage from tropical storm Agatha in 2010, the farm was acquired by Agropecuaria Atitlán, opening a new chapter of planting and processing innovation. Located in the Atitlán region, the farm benefits from volcanic terrain, plentiful rainfall and diverse microclimates. Half of its land is committed to tropical forest conservation.
