PROCESSING
This microlot is washed, a method that typically involves removing the outer fruit from ripe cherries, allowing a period of fermentation, washing away the remaining mucilage and drying the parchment. In Guatemala, the fermentation period often ranges from 12 to 48 hours depending on local conditions; the specific duration for this coffee is not provided. The result is a cup with chocolate sweetness, green tea character and a lively, sparkling acidity.
THE VARIETY
Castillo was developed by Cenicafé, the research centre of Colombia’s National Federation of Coffee Growers, and released in 2005. The variety was bred to improve resistance to coffee leafrust. This Guatemalan lot shows a sweet and juicy side of Castillo, balanced by fresh floral notes.
