  • PROCESS

    As with many of Colombia’s classic washed coffees, cherries are selectively handpicked at peak ripeness and depulped the same day. The coffee undergoes open-air fermentation in tanks for approximately 12–36 hours, depending on conditions and desired profile.

    At Patio Bonito, fermentation protocols have been carefully refined. Paola Trujillo has introduced controlled innovations to enhance clarity and consistency in both washed and natural lots. After fermentation, the coffee is thoroughly washed to remove mucilage before being dried on patios or in controlled drying systems until stable moisture content is achieved.

    The result is a clean, structured cup that highlights Pink Bourbon’s crisp acidity and layered sweetness.

    HISTORY

    Finca Patio Bonito is a family-run farm in Caldono, Cauca, led by Carlos Arturo Trujillo and his daughter Paola Trujillo. Carlos has worked in coffee for nearly 50 years, describing the journey as long but deeply rewarding.

    Paola returned to the farm in 2022 after years of experience as a cupper and coffee buyer in Nariño and Huila. Her technical background has strengthened the farm’s processing precision, bringing new levels of consistency and innovation.

    The 11-hectare farm includes 9 hectares of coffee with approximately 47,000 trees across 13 varieties, including Castillo, Colombia, Pink Bourbon, Gesha, Typica, SL-28, Red Bourbon, Java, Laurina, Wush Wush, and others. The Trujillo family operates with three guiding principles: food security, soil conservation, and responsible coffee cultivation aiming to leave behind not only quality coffee, but knowledge and sustainability for future generations.
