PROCESSING
In the typical washed process used for coffees like this in Ethiopia, ripe cherries are picked and depulped on the same day. The coffee then ferments for approximately 8–12 hours in open-air tanks before being washed through water channels to remove the remaining mucilage. Finally, the coffee is spread onto raised beds and dried for approximately 15 days, depending on weather conditions.
This clean processing style allows the coffee's delicate fruit and floral character to shine through exactly what we wanted to highlight with our light roast.
PRODUCER
This coffee was grown by Mr. Tadese Teko in Shale village near Worka town in Yirgacheffe.
Tadese owns eight hectares of land and supports his family through coffee farming. Like many farmers in the area, the farm uses locally produced natural fertiliser, and according to the producer information, no chemical fertiliser is applied to coffee grown there. Tadese traditionally produces washed coffees and has usually delivered his harvest to nearby washing stations. This particular coffee was separated as an individual lot because of its exceptional quality.
The lot is part of the Single Farmer Project, created to provide Ethiopian producers with a marketplace for farm-traceable coffees. Rather than identifying the coffee only through a washing station or cooperative, the project makes it possible to trace and present this coffee specifically under Tadese Teko's name.
YIRGACHEFFE
Yirgacheffe is one of Ethiopia's most celebrated coffee-growing regions. Its warm tropical climate, distinct wet and dry seasons, high elevations and numerous microregions create excellent conditions for complex coffees. Much of the region's coffee is shade-grown by small producers.
For this collaboration, we've kept the roast light to let those qualities speak for themselves.
