  • PROCESSING

    Kainamui follows the traditional Kenyan washed process, renowned for producing some of the world’s most vibrant and structured coffees. Ripe cherries are delivered daily by local farmers and depulped shortly after harvest. The coffee is then fermented in open-air tanks for 24–48 hours to break down the remaining mucilage.

    A distinctive feature of Kenyan processing is the soaking stage. After washing, the coffee is submerged in clean water for an additional 12–72 hours before being transferred to raised drying beds. This extended soaking is believed to contribute to the remarkable clarity, intense fruit character, and lively acidity that Kenyan coffees are famous for.

    HISTORY

    Kainamui Factory serves approximately 1,800 smallholder coffee farmers in Kirinyaga County, located on the fertile slopes surrounding Mount Kenya. Around one-third of the cooperative members are women, and most farmers cultivate coffee on less than half a hectare of land, typically managing around 200 coffee trees alongside crops such as bananas, tea, maize, macadamia, eucalyptus, and grevillea.

    The factory is part of the New Ngariama Farmers Cooperative Society, which supports producers through agricultural training, field visits, and pre-financing programs that help families cover production costs, school fees, and emergencies.

    Kirinyaga is one of Kenya’s most celebrated coffee-growing regions. Rich volcanic soils, abundant rainfall, and the influence of Mount Kenya create ideal conditions for producing coffees with intense fruit complexity and vibrant acidity. Kainamui’s AA lots are excellent examples of the quality and precision that have made Kenyan coffee one of the most distinctive origins in the specialty coffee world.
