PROCESSING
This Pink Bourbon is produced using an Oxidation Washed process. Fully ripe cherries are selectively harvested and carefully monitored before being depulped on the day of picking. The coffee then undergoes a controlled open-air fermentation before being thoroughly washed to remove the remaining mucilage.
Following fermentation, the parchment is slowly dried under carefully controlled conditions to preserve the variety's vibrant fruit character and refined sweetness. The result is a remarkably clean and transparent cup that highlights the elegance of Pink Bourbon and the cool high-altitude climate of Cauca.
HISTORY
Finca Juan Martin is an innovative research and production farm operated by Banexport in the mountains of Sotará, Cauca. Rather than focusing on volume, the farm serves as a living laboratory where different coffee varieties and processing methods are continuously evaluated to understand how each can best express its unique flavour potential. Every stage from cultivation and harvesting to fermentation and drying is guided by careful measurements of factors such as Brix level, moisture content, and desired cup profile.
Located just outside Popayán at 2,050 metres above sea level, the farm is equally committed to environmental stewardship. Soil conservation, biodiversity, and sustainable farming practices are integrated into daily operations, while the farm also provides employment and educational opportunities for the local community. Through its experimental approach and commitment to quality, Finca Juan Martin has become a benchmark for modern Colombian specialty coffee production.
