PROCESS
Naughty Nectarine is a washed Maracaturra lot processed at Finca Bethania’s own wet mill. Only ripe cherries are handpicked and floated to remove defects before pulping. After depulping, the coffee undergoes a controlled aerobic fermentation, designed to enhance clarity and preserve the natural fruit character of the variety.
Once fermentation is complete, the parchment coffee is washed thoroughly with clean mountain water and moved to raised beds for slow, even drying. Shade and airflow are adjusted throughout the process to maintain a stable temperature and prevent over-drying.
The result is a cup that is clean, bright and articulate, highlighting nectarine-like acidity and a juicy, refreshing sweetness.
History
Finca Bethania, founded in 1991, is managed by sisters Olga and Martha Lagos, part of a long-standing coffee family in Nueva Segovia. The farm sits among the cool, high valleys of Dipilto and Mozonte, and is known for its focus on selective harvesting, careful processing and environmental sustainability.
Bethania works closely with Beneficio Las Segovias, their family’s dry mill, giving them complete control over each step, from picking to export. Their commitment to quality and community has earned the farm recognition for producing some of the region’s most characterful washed Maracaturra lots.
