    This washed lot from Finca Las Hortensias begins with careful handpicking of fully ripe cherries at 1300 meters above sea level. After harvesting, the cherries are floated to remove underripes and impurities, ensuring only dense, high-quality fruit proceeds to processing. The coffee is then pulped and moved into fermentation tanks, where it undergoes a controlled washed fermentation designed to develop clarity, sweetness, and a clean cup structure.
    Once fermentation is complete, the parchment is thoroughly washed in fresh water and transferred to raised beds for slow, even drying. This careful drying phase preserves the bright acidity and nougat-like sweetness that define this lot.
