PROCESSING
Cherries are handpicked and sorted by ripeness, followed by a short prefermentation period to enhance sweetness and complexity. The cherries are then pulped and fermented aerobically for 72–95 hours, allowing controlled microbial activity to develop a clean yet expressive profile.
After fermentation, the coffee is washed and sun-dried outdoors, achieving a stable moisture content and preserving its silky texture and fruit-forward clarity.
The result is a lively, well-balanced washed coffee that bridges sweetness and freshness, typical of high-elevation Huila terroirs.
HISTORYHertson’s story is one of perseverance and renewal. After years of managing another coffee farm with his brother Jesús, the two decided to pursue their own dream. They began by growing lulo (a citrus-like fruit) to save enough money to buy their own land , eventually finding Finca La Esperanza, an abandoned farm with great potential.
When they purchased it in 2006, the farm was in poor condition, but through hard work, they renovated the old coffee trees and rebuilt both the wet mill and their home. Hertson gradually replanted with varieties such as Caturra, Castillo, Colombia, and Cenicafé 1, combining traditional Colombian cultivation with modern processing.
Today, La Esperanza is a small but thriving 4.25-hectare farm, run by Hertson and his family, with a dedicated team during harvest seasons. Their work embodies the values of Colombian specialty coffee, resilience, curiosity, and a passion for continuous improvement.
