PROCESSING
Las Lajas' Black Honey is a process originally developed by the Chacón family. Ripe cherries are carefully sorted and immediately depulped, while 100% of the mucilage is left on the parchment. The coffee is then transferred to a covered patio and left to dry slowly, receiving only one turn per day. The process takes approximately 15–20 days, allowing the remaining mucilage to contribute sweetness and depth to the cup.
HISTORY
Las Lajas is a family-run micromill operated by third-generation coffee producers Oscar and Francisca Chacón. In 2005, they decided to invest in their own depulper, giving them greater control over both quality and the prices they could receive for their coffee. What began as experimentation eventually developed into a wide range of innovative Honey and Natural processes.
Their work helped establish Las Lajas as one of Costa Rica's best-known micromills. Today, the family produces coffees from several farms while continuing to experiment with processing and drying techniques. The Mariana variety itself is an F1 hybrid between IAPAR 59 and an Ethiopian landrace, closely related to Starmaya and valued for its productivity and rust resistance.
