Ripe cherries are selectively handpicked at peak maturity and delivered to the farm’s wet mill. After pulping, the coffee undergoes controlled fermentation to break down mucilage while preserving clarity and varietal character.
The parchment is then thoroughly washed and dried slowly under the sun on patios or raised beds until optimal moisture content is achieved. Careful drying ensures stability, longevity, and a clean cup structure.
The washed process highlights Anacafé 14’s natural brightness and sweetness, producing a transparent and well-defined flavor profile.
HISTORY
Alejandro Martinez cultivates coffee at Finca San José in the historic coffee region of Coatepec, Veracruz, an area internationally recognized for high-quality Mexican specialty coffee.
Coatepec’s volcanic soils, high humidity, and mountainous microclimate create ideal conditions for slow cherry maturation. This extended ripening period enhances sugar development and contributes to the coffee’s layered sweetness and structured acidity.
Anacafé 14, originally developed in Guatemala, has adapted well to Veracruz’s terroir, offering improved resilience while maintaining cup elegance.
