    Ripe cherries are selectively handpicked at peak maturity and delivered to the farm’s wet mill. After pulping, the coffee undergoes controlled fermentation to break down mucilage while preserving clarity and varietal character.

    Alejandro Martinez cultivates coffee at Finca San José in the historic coffee region of Coatepec, Veracruz, an area internationally recognized for high-quality Mexican specialty coffee.

    Coatepec’s volcanic soils, high humidity, and mountainous microclimate create ideal conditions for slow cherry maturation. This extended ripening period enhances sugar development and contributes to the coffee’s layered sweetness and structured acidity.
